Crunchy Brussel Sprouts

If you swore you would never eat brussels sprouts again since you were a kid, let this super tasty recipe sway you back. A perfect inclusion to the Sunday roast.

Eating them regularly have been associated with helping in the prevention of certain cancers.

They are beneficial in helping lower high cholesterol levels, packed with antioxidants, anti-inflammatory and rich in fibre.

100gms of brussels sprouts (approx. 10) has more Vitamin C than an orange!

Ingredients:

400g brussels sprouts – halved

Zest and juice of 1 lemon

25gm butter/coconut oil/avocado oil

5 rashes of gamze bacon – finely chopped

¼ cup of pine nuts – toasted

Directions:

  1. Boil brussels sprouts in boiling water for 3-5 minutes – drain well
  2. Melt butter in frying pan over high heat. Add bacon, cook until lightly browned. Add the brussels sprouts, lemon
    zest and juice and pine nuts.
  3. Gently toss to combine – serve immediately
