100gms of brussels sprouts (approx. 10) has more Vitamin C than an orange!
Ingredients:
400g brussels sprouts – halved
Zest and juice of 1 lemon
25gm butter/coconut oil/avocado oil
5 rashes of gamze bacon – finely chopped
¼ cup of pine nuts – toasted
Directions:
- Boil brussels sprouts in boiling water for 3-5 minutes – drain well
- Melt butter in frying pan over high heat. Add bacon, cook until lightly browned. Add the brussels sprouts, lemon
zest and juice and pine nuts. - Gently toss to combine – serve immediately
